Quick Chorizo and Prawn Paella

This recipe is one of my favourites as it only takes 10 minutes (as long as you remember to cook the rice beforehand). You could add other seafood if you wished e.g squid, mussels.

Ingredients (Serves 2):
1 tbsp Oil
1 Onion sliced
2 garlic cloves finely chopped
1/2 tsp dried chilli flakes
150g Chorizo sliced
1 tsp Tumeric
600g Cooked Plain Rice
200g Frozen Cooked Prawns, defrosted
100g Frozen Peas
200ml Boiling water

Method:
Step 1: Heat oil in pan and fry onion, garlic, chilli and chorizo for 2 mins
Step 2: Add tumeric and stir in
Step 3: Add in rest of ingredients and cook until water absorbed (usually about 5 mins)
Step 4: Season and serve with lemon wedges

Sounds like a very nice and easy dinner when you are short of time. How do you get your pre-cooked rice? Is it the ready to eat stuff fromt he supermarkets or do you just save some from a previous meal in the week?

I just cook it in the morning if I haven't got any leftovers.

Sounds good, Beth. Quick and easy, that's what I like, too. And I'm sure I would have had a few too many glasses of wine by 10pm on a Saturday night as well.

Ah, cricket. I never understood the game, but it's just so quintessentially English, it makes me quite homesick.
