A Very Good DayDaughters in Bed, hubby is playing darts and I have a glass of wine in hand - perfect! I was going to write up a Soup recipe for you but 2 really good things have happened today that have changed my plan. The first is that my Job Evaluation results came back today, and despite a poor result initially, after a formal review my post has now been upgraded - which means 14 months of back pay (couldn't have come at a better time!) - although I am tempted to buy a new oven and digital camera (you'll see why in a minute) which would pretty much wipe the money straight away.
After this initial euphoria, I realised when I got home from work that I didn't have anything planned for Dinner. Fridge and cupboards were bare (got to go shopping tomorrow) and all I had was 2 chicken breasts, a sweet potato that had seen better days and some coconut milk - so, I decided to make a curry and it couldn't have turned out better (my second success of the day)! OH said it was one of the best curries he'd ever tasted - praise indeed from a man who really knows his curry!
Chicken and Sweet Potato Curry
1 onion, sliced
heaped tsp of Chilli flakes
2 chicken breasts, cubed
1 sweet potato, peeled and cubed
1 can coconut milk
2 tbsp balti curry paste
1. Fry onion and chilli flakes for a few minutes
2. Add half can coconut milk and bring to simmer
3. Add curry paste and mix in
4. Add other half of coconut milk
5. Add sweet potato and chicken
6. Simmer for approx 20 minutes until sweet potato tender and chicken cooked through
7. Serve with Rice and Naan Bread
It was a bit hot for my daughter so she demolished the naan bread instead!
