Having been to my local pick your own farm this weekend and coming back with a huge punnet of strawberries (as well as a daughter with a very red mouth and stained clothes), I decided to develop a new muffin recipe. 

These strawberry and white chocolate muffins are delicious and are perfect with a cup of tea or glass of milk.

TOP TIPS FOR MAKING STRAWBERRY MUFFINS

Try adding blackberries or raspberries instead of strawberries - choose a berry that's in season.

Substitute the white chocolate for milk or dark chocolate if you prefer.

The muffins can be frozen so are great for pulling out of the deep freeze for kids lunchboxes or summer picnics.

Strawberry & White Chocolate Muffins

prep time: 10 MINScook time: 20 MINStotal time: 30 mins
An easy fruity muffin recipe made with berries and white chocolate.

ingredients:


  • 300g Plain Flour
  • 2 TSP Baking Powder
  • 150g Golden Caster Sugar
  • 50g Butter, melted
  • 225ml Milk
  • 1 Egg
  • 1 TSP Vanilla Extract
  • 100g Strawberries, diced
  • 75g White Chocolate, broken into small pieces.

instructions:


  1. Preheat the oven to 200°c/180°c fan and line a muffin tin with paper cases - this recipe makes 8.
  2. Sieve the flour and baking powder into a bowl then stir in the sugar.
  3. In a jug mix together the butter, milk, egg and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix gently to combine. Stir through the strawberries and white chocolate.
  5. Spoon into the paper cases and bake in the oven for 20-25 minutes.
