TOP TIPS FOR MAKING THE RICE SALAD

  • Cook the rice the night before you want it and store in the fridge.
  • Vary the salad veggies and fruit. You could try cherry tomatoes, cucumber, spring onion, sultana's and pineapple.
  • The rice salad will keep in the fridge for a couple of days.

A fruity summery rice salad made with basmati rice.

ingredients:


  • 600g Cooked Basmati Rice
  • 1 Red Onion, sliced thinly
  • 1 Apple, cored and chopped
  • Handful of Dried Cranberries
  • 1 Yellow Pepper, deseeded and chopped
  • Handful of Cashew Nuts
  • 2 TBSP chopped Parsley
  • For the dressing:
  • 3 TBSP Mango Chutney
  • 2 TBSP Soy Sauce
  • 1/2 TSP Brown Sugar
  • 1 TBSP Olive Oil
  • 2 TSP Curry Powder
  • Juice of 1 Lemon

instructions:


  1. Place all of the ingredients for the salad in a large bowl.
  2. Whisk the dressing ingredients together then pour over the salad and mix well.

  1. Beth, the salad looks great. Thanks for leaving a comment on my blog. I'm afraid I bought the peanut butter chips in the US on my last visit. I can't find them in the UK either. You can order them from www.skyco.uk.com though, but they are not cheap on there as they charge quite a bit for delivery as far as I know unless you do a big order.

  4. I love rice salads, I will have to try this after I make a pilgrimage to the store tomorrow.

    Oklahomans are as bad as the Brits for moaning about the weather. Here it's always too hot, too cold, too wet, too dry, too windy, or too something else. Right now it's too bloody hot!

    Much as I love the Lake District, any info I could give you would be way out of date now.

  8. I always think salads like that taste better the next day...the flavors just come together. We've had awful weather here lately...so humid. Today it's raining buckets-I think that means a baking day.

  14. hey, maybe i could help you, this time! :) btw, we had a fabulous time in cornwall! you live in an amazing place! will tell you more next time, but this time it's the lake district!

    we went to the lake district a couple of years ago and stayed at a gorgeously charming and very friendly B&B near Beatrix Potter's house. I think it was called Buckleyeat. big open fire in the living room, friendly and welcoming owners, charming old house. They also had fantastic breakkie - 4 courses, if i can remember. and there are choices, too. it went sth like croissants, fruit salad, fry-up, toast and jam. and next door was a great pub with a lovely game pie and fruit beers! do check it out. i recommend it warmly.

    we had a car, but walked to places. there is an easy walk to lake windermere, and i think we also went to 2 or 3 wordsworth's houses (my poor husband was sick and tired of daffodils by the end of it all...).
