I love chicken, adore pasta, and one of my favourite salad dressings is honey and mustard. So, as you can imagine I LOVE this chicken pasta salad

It's a great way to use up the leftover chicken from your Sunday roast too (take a look at my super simple one pan roast chicken recipe)!


Top tips for making chicken pasta salad


  • Make it vegetarian by using quorn pieces instead of chicken.
  • Up the vegetables by adding sweetcorn, pepper and spring onion to the salad.
  • The salad is great for lunchboxes and will keep in the fridge for up to 3 days.
  • Some Parmesan shavings grated on top make it extra tasty.
  • Double the recipe to feed a crowd. It's a great salad for BBQ's or parties.

What to serve with chicken pasta salad?

Chicken Pasta Salad

A light chicken pasta salad with a honey mustard dressing.

Ingredients:

  • 300g Cooked Pasta
  • 6 TBSP Mayonnaise
  • 2 TSP Wholegrain Mustard
  • 2 TSP Clear Honey
  • 1 TSP Balsamic Vinegar
  • 250g Cooked Chicken
  • 1/2 Red Onion, chopped finely
  • 150g  Cherry Tomatoes, halved
  • Handful of Basil to serve

Instructions:

  1. Mix together the mayo, mustard, honey and balsamic vinegar in a bowl and set aside.
  2. In another bowl, place the cooked pasta, chicken, red onion, tomatoes and mix through the honey mustard dressing. Serve with basil to garnish.

  1. yummy! normally, when I make chicken salad, I never think of adding pasta - it makes sense, though! Also, the honey mustard idea is a great one, so much more exciting than plain old mayo :D.
