Nigella's Roast Poussins with Sweet Potatoes


I'd never cooked Poussins before, so when they turned up in my Natoora Box I was thrilled. I knew there was a great looking recipe for Roast Poussins in Nigella Express, so I quickly got the ingredients assembled to try it out.

I'll be honest, Hubby looked suprised to see a whole bird on his plate but heartily enjoyed it, as did I. I'd certainly recommend this recipe to anyone with a pair of Poussins lurking round!!!

Ingredients:
2 Poussins
2 Sweet Potatoes, cut into 5cm cubes
1/.2 tsp Cumin
Salt and Pepper
2 TBSP Garlic Oil
Squeeze Lime Juice

Method:
Step 1: Preheat oven to 200c. Place the poussins in a roasting tray on top of a couple of slices of bread (to absorb the juices) and then scatter the sweet potato chunks around. Sprinkle with Cumin and Salt and Pepper and pop in the oven for 45 minutes
Step 2: Take out of the oven and squeeze over lime juice. I served this with some Roasted Ratatouille - recipe to come..

I've made it with cornish hens. I'd love to try it with the poussins. Lucky you!!

Wow, this looks amazing! I think I'd be impressed if someone served me a whole bird, but I'd love to have a go at it.

This is such a great recipe which I use all the time. Is perfect for when you fancy a roast but haven't the time. Any excuse for sweet potatoes too which I love!
