Spiced Pumpkin Soup and a Natoora Box

I had a lovely package waiting for me when I arrived home from the hospital - another gorgeous box from Natoora filled with wonderful seasonal ingredients. Thank-you Elisa!

My box included the following;
Pumpkin
Bramley Apples
Cox Apples
Dried Cranberries
Dates
Pine Nuts
Oyster Mushrooms
Brie

I decided to try my hand at Pumpkin Soup, following no particular recipe, and it turned out just how I wanted, lightly spiced and fragrant.

Ingredients:
1 Pumpkin (1kg) - peeled and deseeded and cut into chunks
1.5 litres Chicken Stock
1 Large Onion
1 TSP Mustard Seeds
1 TSP Garam Masala
1 TSP Turmeric
1 TSP Chili Powder

Method:
Step 1: Place pumpkin chunks in large pan and cover with stock, bring to simmer and cook until pumpkin is tender
Step 2: Gently fry the onion and mustard seeds for 5 minutes, add spices and fry for a further minute
Step 3: Tip onion mix into pumpkin and stock. Turn off heat and let it cool. Blitz in a food processor until smooth.

Hi Beth,
I am glad you liked the box... it's always a pleasure to find out what you cook with all the ingredients! This soup recipe is yummy... have you ever thought of using cumin, I think it goes wonderfully with the flavour of pumpkin! Take care!

I've never had pumpkin soup but I am certain I would love it! YUM.

Delicious! I have some pumpkin left from a lasagna earlier this week, I'll need to try this for lunch tomorrow :-)
