Shortbread in a Food Processor

An easy shortbread recipe made in the food processor.

Shortbread hearts
These yummy shortbread biscuits are made in the food processor and couldn't be an easier bake.

It's a bung it all in and blitz it recipe, and these are the kind of recipes I love.

TOP TIPS FOR MAKING FOOD PROCESSOR SHORTBREAD

Add the milk gradually down the funnel and pulse until a soft dough forms.

Any shape goes with these. I decided to make shortbread hearts, but if you only have round cookie cutters then that's fine. They will still taste great!

Sprinkle the shortbread with caster sugar when they are just out of the oven. If I'm giving these to the kids I sometimes don't bother with this step, they are already sweet enough.

  • 60g Caster Sugar
  • 175g Plain Flour
  • 1-2 TBSP Milk
  • 1/2 TSP Vanilla Extract

  2. Place the Butter, Sugar and Flour into the processor and blitz until you get a mixture that resembles breadcrumbs.
  3. Add the milk 1 TBSP at a time (you might only need 1 TBSP) and the Vanilla Extract, and pulse until a dough forms.
  4. Take the dough out of the processor and knead for 2 minutes then roll out to a thickness of 1cm on a floured surface. Cut into shapes using a cutter, place the biscuits on a non stick baking tray and bake for 15 minutes.
