Just a quick one today as I want to get out into the garden - mowing, weeding, cleaning garden furniture to be done. We are having a family BBQ tonight that was hastily arranged this morning (didn't know how hungover we would be from footie club dinner but thankfully not very). I haven't had time to go to the shops so this utilises ingredients I already had in the fridge and store cupboard.
Ingredients:
300g Pasta
1 Garlic Clove
200g Feta
10 Sun dried tomatoes, chopped
Handful of fresh herbs, chopped (I used Parsley and Basil)
2 TBSP White Wine Vinegar
5 TBSP Extra Virgin Olive Oil
Method:
Step 1: Cook the pasta according to instructions and add the unpeeled garlic clove to the boiling water too.
Step 2: While the pasta is cooking make the dressing by whisking the white wine vinegar and EVOO, salt and pepper in a bowl.
Step 3: Drain pasta and garlic clove - put the pasta in a bowl and squeeze the garlic out of the skin, chop and add to the dressing.
Step 4: Pour the dressing over the pasta then mix through the feta, sun dried tomatoes and herbs. If you had some olives they would also be good in this.

Looks great, hope the barbie went well.
I love this salad. I made pasta salad tonight with sundried tomatoes, basil and mozzarella. Hope you had a good bbq, it was lovely day for it. I am having one tomorrow if the weather holds. Cross your fingers for me:)
