I thought I'd make a quick and easy salad using the tomatoes and basil, along with some fresh lemon segments (an idea I got from Bill Granger) to go with some grilled chicken we are having for tonight's supper. Keep an eye out for more recipes using ingredients from my Spring Taster Box in the coming days (Asparagus and Pea Risotto, Strawberry Torte......). Thanks Natoora once again.
Ingredients: to serve 2 as a side salad
Garlic Oil
1 Slice Thick Bread, diced
25 Cherry Tomatoes, halved
Small handful of Fresh Basil, torn
1 Lemon, peeled and cut into segments
Caster Sugar, pinch
Salt and Pepper
Drizzle of Extra Virgin Olive Oil
Method:
Step 1: Preheat oven to 170c/150f. Place bread on a baking tray and drizzle with garlic oil. Bake in oven until golden.
Step 2: In a bowl mix together all the other ingredients and add the croutons once baked.
Step 3: Serve with grilled meat or fish.

Great salad, nothing beat fresh tomatoes, crispy bread, and basil...I love the addition of the lemon!
Looks great - would be fab alongside some BBQ'd food .... guess what I'm having tonight!
Sounds lovely, must try using lemon. I can see it would work well.
