Tomato, Lemon and Basil Salad with Garlic Croutons

Tomato, Basil and Lemon Sala

A delivery man came bearing gifts today! The lovely guys at Natoora sent me their Spring Taster Box to try. There was Asparagus, Jersey Royals, Peas, Loquats (haven't quite worked out what to do with these yet!), British Strawberries, Camone Tomatoes and Basil

I thought I'd make a quick and easy salad using the tomatoes and basil, along with some fresh lemon segments (an idea I got from Bill Granger) to go with some grilled chicken we are having for tonight's supper. Keep an eye out for more recipes using ingredients from my Spring Taster Box in the coming days (Asparagus and Pea Risotto, Strawberry Torte......). Thanks Natoora once again.

Ingredients: to serve 2 as a side salad
Garlic Oil
1 Slice Thick Bread, diced
25 Cherry Tomatoes, halved
Small handful of Fresh Basil, torn
1 Lemon, peeled and cut into segments
Caster Sugar, pinch
Salt and Pepper
Drizzle of Extra Virgin Olive Oil

Method:
Step 1: Preheat oven to 170c/150f. Place bread on a baking tray and drizzle with garlic oil. Bake in oven until golden.
Step 2: In a bowl mix together all the other ingredients and add the croutons once baked.
Step 3: Serve with grilled meat or fish.
