This recipe is an adaption of a millionaires shortbread, but uses a flapjack base rather than shortbread, and I actually prefer it. 

These bars are best kept in the fridge to keep the caramel firm.

TOP TIPS FOR MAKING CHOCOLATE CARAMEL FLAPJACKS


  • I've use tinned caramel in these flapjacks, but feel free to make your own.
  • If you are making these flapjacks for children, use all milk chocolate for the topping.
  • Add a handful of raisins to the flapjack mixture before baking, or some chopped nuts, for added taste and texture.

Chocolate Caramel Flapjacks

Ingredients:

  • 200g Butter
  • 140g Light Brown Sugar
  • 60g  Granulated Sugar
  • 2 TBSP Syrup
  • 350g Oats
  • 250g Caramel 
  • For the topping:
  • 100g Dark Chocolate
  • 100g Milk Chocolate

Instructions:

  1. Preheat the oven to 160°c (140°fan) and line a 20cm square cake tin with baking paper.
  2. Melt the butter, sugars and syrup in a pan, stirring occasionally. Take off the heat and add in the oats.
  3. Spoon the flapjack mixture into the prepared tin and bake for 40 minutes. Let the flapjack cool.
  4. Spread the caramel onto the now cooled flapjack and put in the fridge to set (overnight).
  5. Melt the chocolate in the microwave and then spread on top of the caramel
  6. Place the tin back in the fridge until chocolate has set.
  7. Cut into 16 squares and keep in the fridge.

Notes:

Please remember these flapjacks need cooling overnight in the fridge, in order to set the caramel.

  7. I love your recipes, the fruity/chocolate things went down a treat but these are truly gorgeous. I am going to go out to the gym to try and work off some of my naughtness in eating 2 before everyone else saw them, I was thinking of their weight.
