Plum Flapjacks


A sweet and fruity plum flapjack recipe. Perfect for lunchboxes or grab and go breakfasts.

These sweet, fruity plum flapjacks are a great way of using up plums from your tree. 

Flapjacks are a great source of energy and they also keep tummies nice and full, thanks to the oats. Adding fresh fruit to flapjacks gives them a lovely sweetness.

WHEN IS PLUM SEASON?


Plum season in the UK is between mid August and October. 

There are many varieties of plums from yellowy-red skinned Victoria plums to bright red Santa Rosa. 

I used the tarter Mirabelle plum in this recipe (which are good for cooking with), but any variety would be fine.

TOP TIPS FOR MAKING FLAPJACKS


Flapjacks are one of the easiest bakes you can make, and great for getting the kids involved in the kitchen.

This recipe for plum flapjacks uses caster sugar. However, you can substitute for granulated sugar if that's all you have.

You could try using other fruits like apricots, blueberries or raspberries, or even a mixture of different fruits.

Add a handful of chopped walnuts to the flapjack mixture to give it a nutty taste and for added texture.


STEP BY STEP PLUM FLAPJACKS


Step 1: Weigh out all of the ingredients. Put the butter, sugar and syrup in a pan ready to pop onto the hob.

Step 2: Melt the butter, sugar and syrup over a low heat.

Step 3: Add the oats and flour to the melted butter mixture and give it a good stir.

Step 4: Press half the flapjack mixture into a lined tin, then scatter over the chopped plums.

Step 5: Spread the remaining flapjack mixture over the top of the plums and press down lightly.

Step 6: Bake the flapjack in a preheated oven for 35-40 minutes.

Leave the flapjacks to cool completely before cutting into squares. I often leave them overnight so they are easy to cut the next morning.

A sweet and fruity plum flapjack recipe

Ingredients:

  • 250g fresh Plums, stoned and chopped
  • 1/2 tsp Cinnamon
  • 250g Caster Sugar
  • 250g Butter
  • 3 TBSP Golden Syrup
  • 350g Rolled Oats
  • 140g Plain Flour

Instructions:

  1. Step 1: Heat oven to 180°c and grease a 20cm square cake tin and line with baking paper. Toss the plums with the cinnamon, 50g of the sugar and set aside.
  2. Step 2: Melt the butter, remaining sugar and syrup in a pan over a low heat. 
  3. In a large bowl combine the flour and oats.
  4. Pour the butter mix into the dry ingredients and combine.
  5. Press half the flapjack mixture into the tin, spread the plums on top and then add the remaining flapjack mix. Press down and bake in the oven for 35-45 minutes.
  6. Leave to cool in tin before cutting into squares.
