Flame Roasted Pepper Sauce

2 days until I make my way up to London for Cybermummy - I am so excited I'm finding it hard to contain myself. Today, it all started to become reality as I received delivery of #CMCar3 (Hyundai i30) which I will drive up to the conference (with my partners in crime Ruth and Bob). As the delivery man left he told me to look in the boot....so I did of course. In it was a hamper full of surprises for the journey. I don't want to give the fun away so all I will say is make sure you are following the hashtag #CMCar3 on Twitter - it's going to be interesting, especially the sheep. I took it on a short test drive on my lunchbreak and once I'd figured out how to get the thing in reverse and how to take the key out of the ingition...(yes really)... it was plain sailing!


Like most other Cybermummy goers the next few days are going to be manic for me - I'll be making sure hubs and the kids have food for the weekend, I'll be writing lists so he doesn't forget ballet and swimming lessons, I'll be sorting out wardrobe issues, having my hair cut, nails done....oh and work - I mustn't forget work - I will squeeze it in somehow. To help hubs out with mealtimes whilst I am off having fun, I made this super easy sauce to keep in the fridge. It's very versatile - you can spoon it over pasta or chicken or use it as a dip.... and it keeps for a good while too. Very tasty indeed.

Ingredients:
400g Jar of Flame Roasted Red Peppers in Oil, drained
1 Garlic Clove, crushed
2 TSP Smoked Paprika
1 TSP Ground Cumin
2 TSP Red Wine Vinegar
1 TSBP Olive Oil
Salt and Pepper

Method:
Step 1: Whizz everything up in a food processor and store in fridge (for up to 2 weeks)

My hubs likes a good red pepper sauce too. Sounds like you are in for quite an adventure!
