I've just returned from a lovely weekend at Bite 'N' Write in Birmingham - the first UK food bloggers conference outside of London. It was great meeting bloggers I have 'known' for years (especially Jac and Jules) and also building new contacts and friendships - I just wished we had had more time to chat...next time! There were some great talks by inspirational bloggers - particularly Judith Lewis and Jeanne Horak-Druiff as well as a VERY useful photography workshop by Fraser Shot...where we learnt that tampons are a vital piece of equipment. More on that and the conference as a whole at a later date, but you can see some of my photo's from the day here.
I made this pork dish last week and have been itching to blog it ever since - it was good. The cranberry sauce, apples and red wine vinegar produces a thick, syrupy sweet and sour sauce that would work equally well with chops or chicken. Definitely a recipe I will be revisting soon.
Sticky Cranberry and Five Spice Pork Steaks
Ingredients: to serve 2
2 TSP Five Spice Powder
2 Pork Steaks - from my Keevil and Keevil Meat Box
1 Red onion, sliced
1 Red apple, sliced
100ml Chicken Stock
2 TBSP Cranberry Sauce
1 TBSP Red Wine Vinegar
Method:
Step 1: Sprinkle the Five Spice powder over the pork steaks then fry for about three minutes each side in a frying pan - put on a plate and cover in foil.
Step 2: Heat another 1 TBSP of oil in the same frying pan and cook the onion and apples for 5 minutes on a highish heat.
Step 3: Add the stock, cranberry sauce and red wine vinegar and boil vigorously until syrupy. Return the pork steaks to the pan to warm through before serrving with rice and veg.
