Sweetcorn & Cheddar Fritters

I've been making these easy sweetcorn and cheese fritters for what seems like decades, and seeing as my eldest is 13, I pretty much have!

These fritters are so simple to make, and great for baby led weaning. They are very easy for babies and small children to handle, and soft to eat.

Even my 10 year old still loves them....with a big dollop of ketchup on the side.

TOP TIPS FOR MAKING FRITTERS


The fritters freeze really well, so why not make a double batch and freeze half for another day. I'm all for time saving! Just freeze between layers of greaseproof paper in a Tupperware container.

Add some grated carrot to the batter, or finely chopped spring onions if your kids are a bit older. A teaspoon of dried herbs is nice too.

I usually use grated cheddar in these fritters, but red Leicester would also work well.

I like to serve these for lunch with some carrot, cucumber and celery sticks on the side.


STEP BY STEP INSTRUCTIONS FOR SWEETCORN FRITTERS


Step 1: Weigh out your ingredients for the fritters and grate the cheese.

Step 2:  With a fork, mix in the egg and flour until you get a smooth batter.

Step 3: Then it's time to stir in the sweetcorn and grated cheddar.

Step 4: Mix until it is all combined. You can season at this point with salt and pepper if you wish.

Step 5: Add enough milk to make a thick batter consistency - usually around 50-75ml of milk. You can use whole milk, semi skimmed or skimmed milk in this recipe.

Sweetcorn and Cheddar Fritters. A great recipe for baby led weaning.

Ingredients:

  • 50g Plain Flour
  • 1 egg
  • 1/2 TSP Baking Powder
  • 50g Grated Cheddar
  • Half a small tin of Sweetcorn
  • 50ml of Milk (or enough to make a thick batter)

Instructions:

  1. In a large bowl mix together the flour and egg then stir in the baking powder, cheddar and sweetcorn.
  2. Slowly add enough milk to make a thick batter - I used about 50ml.
  3. Heat some butter and oil in a frying pan and fry large spoonful's of the batter as you would American style pancakes. Flip after about 2 minutes. Serve with extra grated cheese.
