We love marmalade in this house, and my Marmalade Loaf is always a popular bake, but this time I wanted to create something altogether more savoury.

And so this Sticky Marmalade Chicken recipe was born. It's a quick and easy meal for weeknight suppers, taking less than half an hour to make.

The marmalade caramelises as it cooks, and produces a yummy sticky glaze for the chicken, which I served with rice and green beans.

Can I make marmalade chicken in a slow cooker?


Yes! This is a super easy recipe to make in your slow cooker. Just place the uncooked chicken breasts in the slow cooker basin, mix together the other ingredients in a jug, pour over and cook on LOW for 6 hours. 

You will need to reduce the amount if stock to 200ml, otherwise the sauce will be too runny. If, at the end of the cooking time, the sauce is still too runny for your liking, just pour the sauce into a saucepan and boil for a few minutes, until it thickens up.

A quick and easy sticky Marmalade Chicken recipe, great with rice and fresh steamed vegetables.

Ingredients:

  • 4 Chicken Breasts, skinless and boneless
  • 1 TBSP Olive Oil
  • 4 TBSP Marmalade
  • 300ml Chicken Stock
  • 1 TBSP Fresh Thyme
  • 1 TBSP Sweet Chilli Sauce
  • 1 TSP Soy Sauce

Instructions:

  1. Heat a little oil in a frying pan, and brown the chicken breasts for 3 minutes each side.
  2. Add all of the other ingredients to the pan and simmer for 10 minutes.
  3. Remove the chicken to a plate then boil the sauce until it turns sticky and syrupy. This will take about 5 minutes.
  4. Return the chicken to the pan to warm through and serve with rice and vegetables.

Notes:

Make it spicy, by adding 1tsp of chili powder at the same time as the marmalade.
