Easy Apple & Blackberry Crumble


An easy Bramley Apple and Blackberry Crumble recipe. No rubbing in required for the crumble topping, so it's super speedy too.

You can't beat the taste of a homemade apple and blackberry crumble, and it seemed like a good time to make one of our favourite puddings.

This crumble topping is a bit different to most others you'll see though, which what makes it super quick and easy to prepare.

A NEW TYPE OF CRUMBLE TOPPING


Although crumbles are really easy to make, I sometimes find rubbing the crumble topping together by hand a bit of a pain when I'm short of time.

This topping is different though and makes it even easier to put together! All you do is pour melted butter into the other crumble topping ingredients, mix with a metal knife and after no time, crumbles and clumps will form.

It makes the crumble so quick to assemble, barring the peeling and slicing of the apples, and then you can leave it to bubble away in the oven while you get on with something else (always useful when you've got 3 children).

TOP TIPS FOR MAKING FRUIT CRUMBLES


Vary the fruit by substituting the blackberries with raspberries or loganberries. Try and use what's in season if you can. We have lots of blackberries growing in the fields behind our house so always end up with a freezer full. 

If you want to freeze foraged blackberries, wash them in a colander and leave to dry completely. Spread the blackberries onto a large baking tin, lined with parchment, and open freeze for a couple of hours. You can then pop the frozen blackberries into freezer bags and stash away until needed.

Serve the crumble warm out of the oven with clotted cream or homemade no churn ice cream.


Blackberries

Use different nuts in the topping if you don't have walnuts.  Hazelnuts, pecan nuts or flaked almonds would work well. Alternatively just leave them out altogether.

If you can't get hold of oatmeal for the topping, use porridge oats instead (porridge oats are already in the topping so just add the amount on to that). I usually find oatmeal next to the porridge oats, or sometimes by the flour in the baking aisle.

Serve the crumble with clotted cream or custard. I'm actually a fan of cold crumble and warm custard. My husband prefers hot crumble and cold cream. How do you like your crumble served?

The crumble can be frozen uncooked for up to 3 months. Let the crumble defrost for an hour or so before baking.

      Ingredients:

      • 75g Oatmeal
      • 50g Porridge Oats
      • 125g Plain Flour
      • 50g Walnuts, chopped
      • 150g Light Brown Sugar
      • 1/2 TSP Baking Powder
      • 1/4 TSP Bicarbonate of Soda
      • 125g Butter, melted
      • 700g Bramley Apples, peeled and chopped
      • 300g Blackberries
      • 50g Caster Sugar
      • 1 TSP Cinnamon
      • 50ml Water

      Instructions:

      1. Preheat the oven to 180° C (160° C Fan).
      2. Put the oatmeal, oats, flour, walnuts, light brown sugar, baking powder and bicarbonate of soda in a large bowl then pour in the melted butter and mix to form the crumble topping, set aside.
      3. Put the apples, blackberries, caster sugar, cinnamon and water in a 2 litre oven proof dish then top with the crumble.
      4. Bake for 45-55 minutes until golden and bubbling. Serve with clotted cream or custard.

      1. So yummy! Crumble is definitely one of my favourite desserts too at this time of year, topped with lots of custard ideally!
