I use my slow cooker at least twice a week. It's so handy just to be able to chuck the ingredients in and leave it to cook away all day.

This slow cooker sausage, mushroom and red onion casserole is rich and tasty. I served it with creamy mashed potato for a filling meal.

TOP TIPS FOR MAKING SLOW COOKER SAUSAGE CASSEROLE


Try adding different vegetables to the recipe. Cubed butternut squash or sweet potatoes would work well.

Serve the sausage casserole with mashed potato and seasonal vegetables for a filling and hearty meal.

The casserole can be frozen, once cooked, for up to 3 months.

A slow cooker sausage, mushroom and red onion casserole recipe

Ingredients:

  • 12 Pork Sausages
  • 250g Mushrooms, sliced
  • 3 Red Onions, sliced
  • 1 TBSP Light Brown Sugar
  • 2 TBSP Plain Flour
  • 1 TBSP Tomato Puree
  • 500ml Beef Stock
  • 2 Bay Leaves

Instructions:

  1. Brown the sausages in a large frying pan until golden. Lift out the sausages and place in the Slow Cooker.
  2. In the same frying pan as you cooked the sausages, add the mushrooms, onions and sugar and cook for 5 minutes. Then add the flour, tomato puree, bay leaves and stock, bring to boil then pour over sausages.
  3. Cook in a slow cooker for 8 hours on the low setting.
