Dreamy Vanilla Cupcakes with a Buttercream Frosting

Debenhams kindly asked me to try out some products from their baking range recently. I said yes of course and a lovely big parcel arrived last weekend full of baking goodies including numerous icing tools, palette knives, a pie bird (something I’ve always wanted and a blackberry and apple pie is definitely on the list to make this weekend!), a rather cool retro looking flour sifter, a sugar shaker, lots of pretty cupcake cases and some icing bags with different size nozzles. The first recipe I made, trialling some of the products, were these Dreamy Vanilla Cupcakes with a super smooth buttercream frosting. I was really keen to try out this icing bag and nozzle kit and was impressed with how well the icing went on! They didn’t look half bad given I’ve never been that good at icing cakes. Vanilla Raspberry Cupcakes

It's my birthday today - booooo! I think I'm quite unique in that the birthday blues started early for me....when I turned 20 to be exact. I remember being an utterly miserable sod at my birthday meal, which was being held in a lovely little seafood restaurant with close family and friends. My Mum sensed there was something up (she always knows when there is something up) and when I told her the reason for my rather odd behaviour she laughed and told me to 'enjoy the journey and have a glass of wine'. I pondered what she said that night and that little conversation has stuck with me over the years. Although I'm still not keen on big 'do's', I do try and make more of an effort now for the sake of the kids. I'm generally not a miserable introverted sod any other day of the year, just in case you're wondering...and by the way I'm still quite a few years off 40 so I really shouldn't have this mindset at all. Onwards and upwards as they say...


Christmas Chestnut Cupcakes

Last Christmas I bought some tins of Creme de Marron (sweet chestnut puree) but unfortunately they did no more than linger at the back of my baking cupboard.... until today that is. Getting into the Christmas spirit I was flicking through Delia's Happy Christmas this morning when I spotted a recipe for chestnut cupcakes using creme de marrons. I decided to adapt Delia's recipe a little bit to suit what ingredients I already had in the house and came up with these little treasures.  If you're not keen on mince pies or heavy fruit cake, these would make a great sweet alternative. Cute Cupcakes with Strawberry Frosting

I haven't done much baking recently (other than the  shortbread ) so when Emma offered to send me some Silverspoon cakecraft decorations, flavourings and colourings to try, I jumped at the chance. I used my basic cupcake mixture in these strawberry cupcakes and flavoured it with a few drops of Silverspoon natural strawberry flavouring, giving it a very subtle strawberry flavour.
