These No Bake Chocolate Peanut Butter Squares are so easy and quick to make but taste AMAZING! Just remember to keep them in the fridge to prevent them from going too soft.

TOP TIPS FOR MAKING THE CHOCOLATE PEANUT BUTTER SQUARES

  • Use crunchy peanut butter so extra texture.
  • If you don't like dark chocolate use milk chocolate for the topping instead, or a mixture of dark and milk.
  • These will keep in the fridge in a sealed container for up to 5 days so they are the perfect make ahead treat.

A no bake chocolate peanut butter bar.

ingredients:


  • 50g Butter, softened
  • 200g Smooth Peanut Butter
  • 200g Icing Sugar, sieved
  • 50g Dark Muscavado Sugar
  • 300g Dark Chocolate

instructions:


  1. Line a 20cm square tin with baking parchment.
  2. In a large bowl mix together the butter, peanut butter, icing sugar and dark muscavado sugar until well combined then press firmly into the tin.
  3. Melt  the dark chocolate in the microwave (in 20 second bursts so not to burn it) then spread onto the peanut butter layer. Chill for 2 hours before cutting into squares.

Strawberry and White Chocolate Muffins
Having been to my local pick your own farm this weekend and coming back with a huge punnet of strawberries (as well as a daughter with a very red mouth and stained clothes), I decided to develop a new muffin recipe. These strawberry and white chocolate muffins are delicious and are made even better with a glass of cold milk.


TOP TIPS FOR MAKING STRAWBERRY MUFFINS

  • Try adding blackberries or raspberries instead of strawberries - choose a berry that's in season.
  • Substitute the white chocolate for milk or dark chocolate if you prefer.
  • The muffins can be frozen so are great for pulling out of the deep freeze for kids lunchboxes.

Strawberry & White Chocolate Muffins

An easy fruity muffin recipe made with berries and white chocolate.

ingredients:


  • 300g Plain Flour
  • 2 TSP Baking Powder
  • 150g Golden Caster Sugar
  • 50g Butter, melted
  • 225ml Milk
  • 1 Egg
  • 1 TSP Vanilla Extract
  • 100g Strawberries, diced
  • 75g White Chocolate, broken into small pieces.

instructions:


  1. Preheat the oven to 200°c/180°c fan and line a muffin tin with paper cases - this recipe makes 8.
  2. Sieve the flour and baking powder into a bowl then stir in the sugar.
  3. In a jug mix together the butter, milk, egg and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix gently to combine. Stir through the strawberries and white chocolate.
  5. Spoon into the paper cases and bake in the oven for 20-25 minutes.
