If you love Brie like I do, you will love this brie and bacon pasta. This is my kind of Friday night comfort food, sat in front of the TV with a glass of wine.

TOP TIPS FOR MAKING THE BRIE & BACON PASTA


  • I used a cider washed Cornish brie called Russet Squire, but any brie would be fine.
  • Up the veggies by adding sweetcorn and peas.
  • Use different pasta like penne or fusilli.

An easy creamy brie and bacon pasta recipe.

Ingredients:

  • 400g Pasta (I used Linguine)
  • 150g Brie, rind removed and chopped
  • 200ml of creme fraiche
  • 1 clove garlic
  • 1/2 red onion, sliced thinly
  • 4 rashers smoked bacon
  • 6 Sun dried tomatoes, chopped
  • 50g Pine nuts, toasted (dry fry in a pan for a minute or so)
  • Basil to garnish

Instructions:

  1. Put on a pan of water, bring it to boil and cook the pasta. Place a glass dish over the top of pasta pan then melt together the brie and crème fraiche.
  2. In a frying pan, fry the bacon, garlic and onion for 4-5 mins then add the sundried tomatoes and pine nuts. Add this mixture to the melted brie and crème fraiche mixture.
  3. Drain the pasta then stir through the brie sauce. Serve with basil leaves.
