An easy Lemon and Lime Drizzle Loaf cake.

Ingredients:

  • 225g Butter, softened
  • 225g Caster Sugar
  • 4 eggs
  • 225g Self Raising Flour
  • Zest 1 Lemon
  • Zest of half a Lime
  • Drizzle
  • 90g Caster Sugar
  • Juice of 1 Lemon
  • Juice of 1 Lime

Instructions:

  1. Preheat oven to 180°c (160° fan). Line a 2lb loaf tin with baking parchment.
  2. Cream together the butter and sugar until light and fluffy, beat in eggs then fold in the flour and lemon and lime zest.
  3. Spoon into the loaf tin and bake for 50 minutes or until a skewer comes out clean.
  4. While cake is in the oven, make the drizzle by mixing together the sugar and citrus juices with a spoon.
  5. Once out of the oven, prick the loaf all over with a fork and pour over drizzle. 
  6. Let it cool in the tin before turning out onto cooling rack.
