A Honey and Peanut Butter Flapjack recipe. Perfect for breakfasts on the go.

Honey and Peanut Butter Flapjacks
These honey and peanut butter flapjacks are now my official weekday grab and go breakfast. I make a big batch on Sunday evening and I'm all set for the week. If you're not overly keen on peanut butter, you can always substitute it for an extra 100g of ordinary butter if you wanted. A handful of raisins makes a nice addition too, as do chopped apricots. My kids favourite variation are some milk choc chips thrown into the mix!

These flapjacks are a great source of protein, and the oats (one of the healthiest grains on earth) are a good source of fibre. One of these for breakfast will keep your tummy nice and full until lunchtime. I usually have one for my post swim breakfast!

Honey and Peanut Butter Flapjacks

prep time: 10 minscook time: 20 minstotal time: 30 mins
Oaty flapjacks made with peanut butter and honey. A great grab and go breakfast.

ingredients:


  • 100g Butter
  • 100g Peanut Butter
  • 200g Demerera Sugar
  • 200g Clear Honey
  • 400g Porridge Oats (not instant)

instructions:


  1. Preheat the oven to 180°c (160°fan) and line a 20 x 30cm tin with baking paper.
  2. In a large pan melt the butter, peanut butter, honey and sugar together over a low heat.
  3. Stir in the oats then press into the tin and bake for 15-20 minutes.
  4. Remove from the oven and allow to cool before cutting into bars.
