Wild Garlic, Mushroom and Bacon Sauce

Wild Garlic, Mushroom and Bacon Sauce
Wild garlic is in abundance in my garden at the moment. I've already made some batches of wild garlic pesto which are stashed in the fridge (great for a quick and easy pasta supper) but decided to make a more robust sauce for pasta using the raw leaves. I stirred the sauce through some four cheese tortellini but any type of pasta, fresh or dried would be fine.

| Serves: 2 as a pasta sauce | Prep Time: 5 Minutes | Cook Time: 10 Minutes | Total Time: 15 Minutes |

  • 4 Rashers Smoked Bacon, chopped
  • 150g Chestnut Mushrooms, sliced
  • Handful of Wild Garlic, shredded
  • 200ml Creme Fraiche
  • Handful of Parmesan, grated
  • Ground Black Pepper

  • Step 1: Fry the bacon, mushroom and garlic in some oil unitl cooked.
  • Step 2: Add the creme fraiche and parmesan and stir to combine.
  • Step 3: Serve stirred through your favourite pasta with a grinding of black pepper.

Meal Plan 27th April - 3rd May 2015

Heidi is nearly 4 weeks old and we are slowly getting into a routine. Meals up to now have either been batch cooked from the freezer or quick simple dishes like pasta. I'm still going to keep things easy this week but really want to experiment with making a pasta sauce using some of the wild garlic in the garden - as long as she sleeps long enough! Fridays is tennis night for the older two so we've started making use of our panini press and having ham and smoked cheese panini's with lots of salad, coleslaw, crisps and dips - a really easy Friday night feast.

I've been making batch after batch of flapjacks to keep my energy levels up during the marathon feeding sessions, so another batch of those is on the cards and maybe a carrot cake too.
