Slow Cooker Sweet Potato Korma

Apologies for the lack of activity here. We have relatives staying from New Zealand and I'm just about to return to work from Maternity Leave so it's been a bit hectic around these parts over the last few weeks.

I have been using my slow cooker lots though and this veggie korma with sweet potato and peppers was a real hit with the kids. It couldn't be easier too - you just chop up the veg, pour over the sauce and cook on high for 5 hours! Serve with rice and naan breads for a filling and healthy meal.

Slow Cooker Sweet Potato Korma

A yummy mild veggie slow cooker korma curry using sweet potatoes and peppers.
prep time: 5 minscook time: 5 hourtotal time: 5 hours and 5 mins

ingredients:

  • Sweet Potatoes, peeled and cubed
  • Red Pepper, chopped
  • Green Pepper, chopped
  • Onions, chopped
  • Garlic Cloves, chopped
  • 400g Tin Coconut Milk
  • 400g Tin Chopped Tomatoes
  • 3 TBSP Korma Curry Paste

instructions

Step 1: Put the prepared sweet potatoes, red pepper, green pepper, onions and garlic in the slow cooker basin.

Step 2: In a jug whisk together the coconut milk, tin of tomatoes and korma paste and pour over the veg.

Step 3: Cook on high for 4-5 hours.
