Peanutty Chicken Curry

A gorgeous peanut butter chicken curry made with a secret store cupboard ingredient peanut butter Long lists of ingredients often put me off making a curry, especially on busy weeknights when time is precious. However, this Peanutty Chicken Curry  is different! The ingredients list is small and most of the items you will already have in your store cupboard (peanut butter being one of them) or fridge. It's a fairly speedy recipe too and you can have it on the table in under 40 minutes (even with three children distracting you), which is always a bonus when you have hungry mouths to feed. I was sceptical whether peanut butter would work in a curry but it really does and gives the sauce a lovely smooth silky texture, as well as acting as a sauce thickener. This easy curry is now a staple in our house and features on our weekly meal plans regularly. I hope you enjoy it as much as we do. Mild and Fruity Sausage Curry

Two curry recipes in a week! Sorry about that but I couldn't resist posting this little number to celebrate British Sausage Week which runs from 31st October to the 6th November 2016. Now, you might think sausage and curry are two words that shouldn't be heard in the same sentence together...and I was most certainly in that camp, until recently that is. A friend of mine mentioned she makes a version of sausage curry for her children that according to her, goes down very well (as in everyone eats it without a fuss - can't go wrong then!). I was very sceptical but took a leap of faith, listened to my friend and made it and I'm very glad I did. Who on earth knew sausages would work so well in a curry!! Well, my friend did,  I just wished I had cottoned onto this fab combination sooner. I can't say the first time I served it went without it's problems though. When presenting the sausage curry to the kids, my 7 year old son who like other 7 year old boys lik...

Cauliflower and Lentil Curry

A vegetarian cauliflower and red lentil curry in a creamy coconut and coriander sauce. We've been eating a lot more veggie meals lately and this Cauliflower and Lentil Curry recipe was one that went down particularly well with the family, even with my fussy soon to be 7 year old.  The cauliflower florets are fried first giving them a bit of colour, before adding them into the creamy coconut and coriander sauce. The addition of the red lentils helps to bulk the curry out and make it nice and filling, especially when you serve it like I do with naan bread and rice. I know what you're thinking... double carbs, but you can't have a curry without them can you? If you fancy making the curry a bit on the hotter side you could add a chopped red chilli along with the onion and garlic in Step 1, but I know my kids wouldn't have appreciated that!  Mildly spiced and fragrant is the way to go in this house if you want everyone to eat it. Slow Cooker Sweet Potato Korma

Apologies for the lack of activity here. We have relatives staying from New Zealand and I'm just about to return to work from Maternity Leave so it's been a bit hectic around these parts over the last few weeks. I have been using my slow cooker lots though and this veggie korma with sweet potato and peppers was a real hit with the kids. It couldn't be easier too - you just chop up the veg, pour over the sauce and cook on high for 5 hours! Serve with rice and naan breads for a filling and healthy meal. Nice and Spicy Chicken Curry

It's a bit on the chilly side isn't it? I know Cornwall usually gets away with the worse of the cold weather but it's pretty darn freezing here at the moment. Hubby and I are playing the thermostat game on a fairly regular basis. I turn them up, hubby turns them down, I turn them up again....and so it goes on. It's not just us is it? Anyway, this cold weather definitely calls for hot and spicy food to warm you up and my spicy chicken curry is just about perfect. It's a bit on the hot side for small kids though so this one's probably best reserved for the adults. For this recipe you need to make the curry sauce the night before so the flavours have 24 hours to develop - it really does make a difference to the finished dish. You can also make the curry sauce and freeze it until needed. Feel free to try different meats too, leftover roast beef would work well I think. Spicy Sweet Potato, Chickpea and Spinach Curry

There's nothing better than a warming curry on a wet and windy evening. This is a lovely robust veggie version that will keep you feeling full until breakfast - and I even convinced hubby, who usually isn't satisfied unless there is meat on his plate (although he's still unconvinced by chickpeas). *RELATED RECIPE - SWEET POTATO & BUTTER BEAN STEW * If you wanted a milder curry then use Korma curry paste instead of Rogan Josh. I served this with naan breads and mango chutney but if you wanted to stretch it a bit further then serve some pilau rice alongside.
