These protein packed cookies I'm posting today are super easy to make and a great one for the kids to help with. You just mix everything together in a bowl, roll into 12 golf balls, pop on a baking tray and flatten with a fork. Ten minutes in the oven and you have a very yummy gluten free cookie to enjoy. I used unsweetened peanut butter so they aren't overly sweet, but if you're making them for kids I'd definitely use sweetened Peanut Butter and perhaps a handful of milk choc chips.

GF Choco Peanut Butter Chia Seed Cookies
A super easy gluten free cookie recipe with added chia seeds for extra protein
Ingredients
- 300g Peanut Butter
- 2 TBSP Cocoa Powder
- 1 TBSP Chia Seeds
- 1 TBSP Carob Syrup
- 1 Egg, beaten
Instructions
Step 1: Preheat the oven to 180c. In a large bowl mix together all of the ingredients.Step 2: Roll into 12 golf ball size balls, place on a baking tray and flatten with a fork.Step 3: Bake for 10 minutes then place on a cooling rack.
