FRANGIPANE CAKE


Frangipane is an almond flavoured sweet pastry cream, used in popular desserts like Bakewell Tart. Here I've created a take on that sweet almondy filling and turned it into a cake.

Apricots and plums are popular fruits to use with frangipane, as their slight tartness partners well with the sweet almondy frangipane. However, here I've used a little known fruit called Metis, which is very much like apricots and plums in texture.

Metis® is a hybrid fruit created by natural cross pollination by bees between selected apricot pollen and plum blooms. It’s a family of 4 fruits; Oxy, Tonic, Safari and Aroma, each with their own special characteristics.

From deep purple to rosy pink or ruby red, the Metis® family of fruits offers a kaleidoscope of tempting colours.

They are also perfect for use in this almondy, moist frangipane cake.

TOP TIPS FOR MAKING FRANGIPANE CAKE


Use apricots or plums if you can't find Metis. Both apricots and plums have similar textures to the Metis fruit.

Add a few drops of almond extract to make it extra almondy in taste.

The cake will keep for up to 3 days in an airtight container. The cake isn't suitable for freezing due to the water content of the fruit.

Serve with custard for a yummy pudding or clotted cream if you are feeling extra indulgent.

      A quick and easy sweet almond frangipane cake using seasonal fruit. Serve with custard for a yummy pudding.

      Ingredients:

      • 4 Metis® halved and stoned (or use apricots or plums)
      • 150g Butter, softened
      • 150g Caster Sugar
      • 1 TSP Vanilla Extract
      • ¼ TSP Cinnamon
      • 3 Eggs
      • 125g Plain Flour
      • 125g Ground Almonds
      • 11/2 TSP Baking Powder

      Instructions:

      1. Preheat oven to 180°c (160°fan) and line a 20cm springform tin.
      2. Cream together the butter, sugars then mix in all of the other ingredients apart from the metis fruit.
      3. Spoon into the 20cm greased springform tin then place the Metis® cut side down into the cake batter.
      4. Bake for 35-40 minutes until golden. Cool before releasing from the springform tin.
      5. Serve warm with custard or cold with clotted cream
