Cornish Chilli Chorizo Pasta

This pasta recipe is a real crowd pleaser around these parts! Made with Cornish Chilli Chorizo from the Artisan Food Village, near Bude, the pasta is hearty, filling and full of flavour.

A spicy chorizo pasta


The Cornish chilli chorizo provides a lovely warmth to the dish, without it being too hot. The double cream added at the end of cooking helps temper the spiciness to levels my kids would tolerate.


Ingredients


To make this spicy chorizo pasta you will need;
  • Chilli chorizo, or plain chorizo sausage if you prefer
  • Onion
  • Garlic
  • Sun Dried Tomatoes
  • Smoked Paprika
  • Dried Thyme
  • Double Cream
  • Pasta
  • Parmesan and Parsley to serve

Equipment


You will need a chopping board and sharp knife as well as a shallow casserole for making this dish. The pasta needs to be cooked separately, so a pasta pan or large saucepan is needed too.

Instructions


One: Fry the onion and garlic in a little oil until soft.

Two: Add the chorizo, sun dried tomatoes, smoked paprika and thyme and cook for 5 minutes.

Three: Meanwhile cook the pasta in a separate pan and drain. Add the cooked pasta and double cream into the chorizo mixture, and stir to combine.

Four: Serve with grated Parmesan and chopped parsley.

Top tips


The chorizo contains quite a bit of oil, so you might want to mop up a bit of the excess oil from the chorizo with a kitchen towel before combining with the pasta and cream. Use a spoon to scrape all the chorizo and onion mix to one side of the pan, then tip it so the oil runs away from the mixture. Mop it up with kitchen towel, or if there is a lot, spoon it into a cup.


Serving suggestions


I like to serve this pasta with fresh crusty bread and green salad. Leftovers are fantastic the next day, either reheated or eaten cold.

Variations


Up the spice by adding 1 chopped red chilli, or 1 teaspoon of dried chilli flakes.

Increase the vegetable content of the pasta dish by adding courgettes, peppers and sweetcorn. Add them in at the same time as the chorizo and spices.


Storage


The cooked pasta will keep in the fridge for up to 4 days. It can be eaten cold for lunch or reheated in the microwave.

This Cornish Chilli Chorizo Pasta recipe is easy, tasty and ready in about 30 minutes, making it an ideal midweek meal.

Ingredients:

  • 1 tbsp Olive Oil
  • 1 Red Onion, sliced
  • 2 Garlic Cloves, chopped
  • 150g Chorizo, chopped
  • 6 Sun Dried Tomatoes, chopped
  • 1 tsp Smoked Paprika
  • 1 tsp Dried Thyme
  • 150 ml Double Cream
  • 300g Pasta (cooked)
  • 100g parmesan, grated
  • 4 tbsp fresh chopped Parsley

Instructions:

  1. Cook the pasta according to packet instructions, drain and set aside.
  2. In a shallow casserole heat the oil and gently fry the onion and garlic for 5 minutes until soft.
  3. Add in the sun dried tomatoes, chorizo, smoked paprika, dried thyme and cook for a further 5 minutes on a medium heat. Stir every so often. Drain away any excess oil.
  4. Add in the cooked pasta and double cream and stir to combine. Now mix in half of the grated Parmesan and half of the parsley.
  5. Serve in bowls with extra Parmesan and parsley.
