Slow Cooker Risotto with Clotted Cream

An easy slow cooker risotto recipe made extra indulgent by stirring through thick and creamy Cornish clotted cream at the end of cooking! I was sceptical whether risotto would work well in the slow cooker, worrying that it might go a bit mushy. I needn't have worried and now I have perfected this simple and easy slow cooker risotto recipe, which can be tweaked with many flavour combinations. Oven Baked Chicken, Pea & Spinach Risotto

I've got another super easy chicken recipe to share with you today. Utilising the trusty Sunday leftovers, this creamy risotto is one of my 'bung it in the oven' varieties. No stirring means you have time to get on with other things - at the moment this means mopping my muddy floors! I'm sure the weather will get better once the kids go back to School. The kids aren't that keen on spinach so I only added a small handful - it would quite happily take a lot more. I also added a couple of bacon rashers too as I had them in the fridge, but it would be fine without. Baked Squash Risotto

We have just enjoyed this lovely baked risotto for dinner, using the squash, 1 onion, some butter and Cheddar from the Farmison Veg and Dairy box I received on Friday. It requires no stirring so perfect when you are too busy to stand by the hob. The amount below serves 2 (the kids had a cooked lunch at School/Nursery) but you can easily double everything to serve 4. Those of you who follow me on twitter will know the night I made this I declared it the best risotto I had  ever made! The slightly sweet nutty roasted squash together with the tangy Helford blue cheese I purchased at   Fifteen Cornwall Farmers Market was a match made in heaven, but the sage just gave it an extra special dimension. A sprinkling of toasted pine nuts if I'd had any, would have been a great addition too. The colder autumn weather is coming (I love Autumn) which makes it the perfect time to resurrect my risotto making skills (although I do enjoy the odd risotto in the summer too). I know some people really don't like making risotto's because of the endless stirring involved. But I actually find it rather therapeutic and calming after a stressful day, whether at home with the kids or at work. It always helps to have a glass of wine in hand and some good music on the ipod too! Oven Baked Mushroom and Taleggio Risotto

A seriously good mushroom risotto for the cold winter nights we are experiencing at the moment.  This risotto is oven baked (meaning a lot less arm ache) and I also decided to finish it off under the grill with some Taleggio - which worked really well. Taleggio, if you aren't too familiar is a semi-soft, washed-rind cheese from the Valtaleggio region in northern Italy, near Lombardy. It's fairly mild in flavor (many call it the Italian version of Brie) and it has a moist to oozy texture. Basically it's yummy!!
