I've been making these easy sweetcorn and cheese fritters for what seems like decades, and seeing as my eldest is 13, I pretty much have! These fritters are so simple to make, and great for baby led weaning. They are very easy for babies and small children to handle, and soft to eat. Even my 10 year old still loves them....with a big dollop of ketchup on the side. TOP TIPS FOR MAKING FRITTERS The fritters freeze really well, so why not make a double batch and freeze half for another day. I'm all for time saving! Just freeze between layers of greaseproof paper in a Tupperware container. Add some grated carrot to the batter, or finely chopped spring onions if your kids are a bit older. A teaspoon of dried herbs is nice too. I usually use grated cheddar in these fritters, but red Leicester would also work well.
