VALENTINES DOUBLE CHOCOLATE MUFFINS



Yield: 12 muffins

Valentines Chocolate Muffins

Double chocolate muffin recipe for Valentines Day
prep time: 15 minscook time: 20 minstotal time: 35 mins

ingredients:

150ml Natural Yogurt
3 eggs
1 tsp Vanilla Extract
175g Melted Butter
175g Golden Caster Sugar
140g Self Raising Flour
1 tsp Baking Powder
1 tbsp Cocoa powder
Icing:
100g Dark Chocolate
140g Icing sugar
140g Butter
Sprinkles

instructions

Step 1: Preheat the oven to 190°c (170°fan) and line a 12 hole muffin tin with paper cases.
Step 2: Mix together the yogurt, eggs and vanilla extract in a jug.
Step 3: In another bowl mix together the dry ingredients then pour in the yogurt mix and melted butter. Mix to combine (but be careful not to over mix). Fill the muffin tin with the batter and bake for 20 minutes in the oven.
Step 4: Melt the chocolate for the icing in the microwave and leave to cool.
Step 5: In another bowl beat the icing sugar and butter together (I used my kitchen aid) then pour in cooled chocolate and mix until combined.
Step 6: Ice the muffins and throw on some heart shaped sprinkles if you wish

  2. I at first wondered if these were sea salt cupcakes. I guess my mind is elsewhere since I made sea salt brownies.The pink chrystalized sugar makes these perfect!!
