Hello, it's been a while! We've had family staying with us from New Zealand since the beginning of July so I've not had a lot of time to develop new recipes or blog recently, plus I was making the most of the beautiful weather with plenty of beach trips with the kids. I kind of lost my cooking mojo too, not sure why, just one of those things. But I'm definitely back on track now.

I had a bit of a cleaning frenzy after our guests left last week, which included a much needed declutter of my kitchen cupboards. I found a very sad looking Terry's Dark Chocolate Orange that I must have stashed away at Christmas so decided to turn it into something yummy! These dark chocolate orange brownies are the perfect combination of a crisp top and gooey middle and lovely with a cuppa or glass of milk. You could even serve them as a dessert with some vanilla ice cream. Hubs took some to work and he said they vanished very quickly, which is usually a good barometer of yumminess.

In other news hubby and I are doing an alcohol free August which is going very well. If I'm honest we'd been drinking rather a lot of wine whilst our guests were staying so we needed a bit of a detox! I do dry January every year, which usually extends well into February because I feel so good (I don't drink that much - one bottle of wine a week usually) but the older I get the more even small amounts of alcohol seem to affect me, particularly with insomnia! I'll keep you updated on progress and you never know I might decide to keep going!

TOP TIPS FOR MAKING THE DARK CHOCOLATE BROWNIES

  • If you prefer milk chocolate just substitute the Terry's chocolate orange for the milk variety.
  • These brownies can be frozen so make a double batch and freeze half for another time.
  • Add a handful of chopped hazelnuts for added crunchiness.
  • Serve warm as a dessert with clotted cream or ice cream.

Dark Chocolate Orange Brownies

A foolproof and indulgent dark chocolate orange brownie recipe using up a Terry's Chocolate Orange.
prep time: 15 minscook time: 35 minstotal time: 50 mins

ingredients:


  • 200g Butter, softened
  • 200g Golden Caster Sugar
  • 75g Light Brown Sugar
  • 2 TSP Orange Extract (or zest of 1 Orange)
  • 4 Eggs, beaten
  • 140g Plain Flour
  • 100g Milk Chocolate, melted
  • 150g Dark Chocolate, melted
  • 1 Terry's Dark Chocolate Orange, broken into segments

instructions


  1. Preheat oven to 170°c (150°fan) and line a 10 x 8 inch baking tin with baking paper.
  2. Cream together the butter, sugars and orange extract until light and fluffy.
  3. Beat in the eggs then fold in the flour until combined.
  4. Beat in the melted chocolate and mix to combine. Pour the mixture into the tin then lay over the chocolate orange segments. Push the segments in half way to half submerge them.
  5. Bake in the oven for 35 - 40 minutes. Let the brownies cool completely before cutting into squares.
