There's a new favourite pasta recipe in our house, and it's one for the adults! This caramelised shallot pasta, packs a punch in flavour, and is perfect for Friday nights in on the sofa, accompanied with a lovely chilled glass of white wine.

The sweetness of the caramelised shallots, accompanies the tangy tomatoes and salty anchovies so well. It's a flavour match made in heaven!

What is the difference between a shallot and an onion?


Unlike regular onions, which grow in single bulbs, shallots grow in clusters, more like garlic. Shallots are generally sweeter and more mellow in flavour than an ordinary white onion.

How do you caramelise shallots?


To get that lovely sweet caramelised flavour, gently cook the sliced shallots over a low heat, in some butter, until sticky and soft. To get the perfect level of stickiness usually takes about 10-15 minutes. Don't forget to keep stirring the shallots, to stop them sticking to the pan.

Can I freeze caramelised shallots?


The caramelised shallots in this recipe can be frozen for future use. You could make a double batch and freeze half for another time. The sticky shallots are great with sausages and barbecued meats.

What pasta should I use?


I've used bucatini pasta in this recipe. Often mistaken for spaghetti, bucatini is slightly thicker than spaghetti, and has a hollow centre, to suck up all that sauce. Feel free to use spaghetti if you can't get hold of bucatini.

Step 1: Gather your ingredients needed to make the caramelised shallot pasta recipe.

Step 2: Gently cook the sliced shallots, until they are sticky and caramelised.

Step 3: Add the anchovy fillets and tomato puree.

Step 4: Cook for 5 minutes until the anchovies have melted into the shallots.

Step 5: Add the cooked bucatini to the sauce and mix well to coat.

Step 6: Serve the pasta in bowls and sprinkle with chopped parsley and Parmesan.

Top tips for making Caramelised Shallot Pasta


  • If you can't get hold of shallots, use 1 large white onion instead. Add 1/4 tsp of sugar when cooking, to help sweeten it.
  • The recipe can easily be doubled to serve 4 people.
  • Remember that that the sticky shallots can be frozen, so why not make double and freeze half for another time?
  • If you can't get hold of bucatini, use spaghetti instead.

Caramelised Shallot Pasta

A delicious and easy caramelised shallot pasta recipe, with sweet caramelised shallots, tangy tomatoes and salty anchovies.

Ingredients:

  • 2 TBSP Olive Oil
  • 3 Banana Shallots, peeled and sliced
  • 3 Garlic Cloves, chopped
  • 50g tin of Anchovy Fillets
  • 2 TBSP Tomato Puree
  • 200g Pasta 
  • 2 TBSP Parsley, chopped
  • 2 TBSP Parmesan, grated

Instructions:

  1. Put a pan of water onto boil. Once the water is boiling, cook the pasta according to packet instructions, drain and set aside, reserving 2 TBSP of the pasta cooking water for later.
  2. Meanwhile, in a frying pan, heat the oil and butter, then gently cook the shallots and garlic until sticky and caramelised. This should take about 10 minutes.
  3. Add the anchovy fillets and tomato puree, stir in and cook for 5 minutes.
  4. Add the cooked pasta to the sauce, along with the reserved cooking water, and stir to coat and heat through.
  5. Serve with chopped parsley and grated parmesan.
