White Chocolate and Cranberry Cookies

 

Deliciously soft and chewy white chocolate and cranberry cookies. One of my favourite flavour combinations and perfect with a glass of milk!

I don't know about you but I love a sweet white chocolate and tangy dried cranberry flavour combo! There is just something so comforting about them, not to mention festive, although they're good any time of the year!

Ingredients

To make these moreish white chocolate and cranberry cookies you will need;
Light Brown Sugar
Caster Sugar
Butter
Egg
Vanilla Extract
Plain Flour
Bicarbonate of Soda
White Chocolate Chips
Dried Cranberries

Instructions

One: In a large bowl, cream together the sugars and butter until light and fluffy.
Two: Beat in the egg and vanilla extract.
Three: Mix in the flour and bicarbonate of soda until a soft dough forms.
Four: Finally stir through the white chocolate chips and cranberries before placing spoonful's onto lined baking sheets and baking in a preheated oven for 10-12 minutes.

Variations

You could try using milk chocolate chips instead of white chocolate chips and raisins or chopped dried apricots instead of dried cranberries. A handful of chopped pecan nuts would add a lovely crunch too.

Storage

The baked cookies will keep in an airtight container for up to 3 days! Alternatively you can freeze the cookies for up to 3 months.
