We've been in the new house almost a week now so I thought it was about time I christened the oven and filled the cake tins again.

These jam shortbread slices couldn't be easier to make and if you have a standing mixer, are super quick. All they require is 35 minutes in the oven and voila, some tasty treats for lunchboxes and snack time. I used some homemade strawberry jam as the filling but any jam would do...apricot would be good.

Jammy Shortbread Slices

A shortbread slice filled with raspberry jam
prep time: 15 minscook time: 35 minstotal time: 50 mins

ingredients:

  • 300g Butter, softened
  • 120g Caster Sugar
  • 1 TSP Vanilla Paste
  • Egg Yolk
  • 500g Plain Flour
  • 400g Jam
  • Icing Sugar

instructions

Step 1: Preheat the oven to 180°c and line a 20 x 30cm tin with baking paper.

Step 2: Cream together the butter, sugar, egg yolk and vanilla paste in a mixer or by hand.

Step 3: Stir in the flour until you get a crumbly dough.

Step 4: Press half the dough into the tin, spread over the jam then sprinkle the rest of the crumbly dough on top and lightly press down.

Step 5: Bake for 35 minutes, leave to cool then cut into slices. Sprinkle with icing sugar.


Jammy Heart Biscuits

Kids will love making these easy jammy heart biscuits. Feel free to vary the shape, stars or just plain circles would be good.
