Banana Cookies


Bored of Banana Bread? These super easy Banana Cookies are another great way to use up those black banana's in your fruit bowl. Flavoured with a hint of cinnamon, these cookies make a great mid morning snack for kids.

We always end up with a few sad looking bananas in the fruit bowl by the end of the week (my kids won't touch them if there is even a speck of black on them), so I usually end up making banana bread or banana muffins for the cake tin.

We were in the mood for branching out a bit the other day, and decided to develop some banana cookies instead.

These yummy cookies are so easy to make and perfect for getting the kids involved in the kitchen.

My 5 year old loves mixing the ingredients together...and sneakily eating spoonful's of the cookie dough straight out of the bowl!

WHY ARE BANANAS SO GOOD FOR YOU?


Bananas are high in potassium and low in sodium, which helps to control blood pressure.

 They also supply vitamin B6, fibre and complex carbohydrates, which are great for maintaining energy levels. Banana's are perfect for a pre run/work-out energy boost.

DID YOU KNOW YOU CAN FREEZE BANANAS!


If you find yourself with black bananas in your fruit bowl but with no time for baking, you can just pop them in the freezer until you want to use them.

I just put them straight in with their skins on, but you can unpeel them first if you want to, and place in a freezer bag.

STEP BY STEP BANANA COOKIES


Step 1: Cream the butter and dark brown sugar in a large mixing bowl. The dark brown sugar gives the cookies a lovely caramel flavour.

Step 2: Mash the bananas ready to add to the mixture. Beat an egg and get your vanilla extract ready.

Step 3: Add the egg, vanilla extract and mashed banana to the bowl. Give it all a really good stir!

Step 4: Weigh out the plain flour, cinnamon, oats and bicarbonate of soda in a bowl.

Step 5: Add the dry ingredients to the buttery banana mixture and stir together until combined.

Step 6: Place walnut size spoonful's on baking trays, making sure they are well spaced.

Step 7: Bake in a preheated oven for 10 minutes. Leave to cool for 5 minutes on the baking tray before removing to a cooling rack.

TOP TIP!


A couple of minutes before the end of cooking, take the cookies out of the oven and flatten them with the back of a fork, before returning to the oven to finish cooking.

An easy Banana Cookie recipe made with over-ripe bananas, oats and a hint of cinnamon.

Ingredients:

  • 150g Butter, softened
  • 175g Dark Brown Sugar
  • 1 Egg
  • 2 small over-ripe Bananas, mashed
  • 1 TSP Vanilla Extract
  • 125g Plain Flour
  • 1/2 TSP Bicarbonate of Soda
  • 1 TSP Salt
  • 1 TSP Cinnamon
  • 250g Oats

Instructions:

How to cook Banana Cookies

  1. Preheat the oven to 180°c (160° fan) and line 3 baking trays with baking paper.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Beat in the egg, mashed banana and vanilla extract.
  4. Finally, stir through the dry ingredients and give it a good mix.
  5. Place walnut size balls onto the baking trays and bake in the oven for 10 minutes. 2 minutes before the end of cooking, flatten the cookies down with the back of a fork, before returning to the oven for the final 2 minutes of cooking.
  6. Once cooked, leave to cool on the trays for 5 minutes before transferring to a wire cooling rack.

  1. i'm not a huge fan of bananas (no apostrophe needed) but i can take them when they're hidden in things like a smoothie or a bread or cake. i'm sure these are delicious. cheers
