Peanut Butter Chip Cookies


An easy peanut butter chip cookie recipe that the whole family will love! These cookies make a great mid morning snack for kids, and keep tummies full until lunchtime.

Who doesn't love a good cookie! These moreish, chewy, peanut butter chip cookies, are really easy to make, and super quick too.

It's a nice recipe for the kids to get involved with, as there is lots of mixing. In fact, my 5 year old can pretty much make these by herself, as they are that easy.

WHERE CAN I GET PEANUT BUTTER CHIPS?


Back when I started blogging in 2008, peanut butter chips were like gold dust here in the UK. I could not find them anywhere! In fact, I resorted to paying my American friend to ship a whole load out to me (after seeing lots of yummy recipes using them from US food bloggers).

These days, peanut butter chips are now widely available in large supermarkets, but if you're struggling to get hold of them, you can bulk buy peanut butter chips* online too.

WHAT DO YOU NEED TO MAKE PEANUT BUTTER CHIP COOKIES?


  • UNSALTED BUTTER
  • PEANUT BUTTER
  • LIGHT BROWN SUGAR
  • CASTER SUGAR
  • PLAIN FLOUR
  • BICARBONATE OF SODA
  • EGG
  • PEANUT BUTTER CHIPS
  • WHITE CHOCOLATE CHIPS
  • VANILLA EXTRACT

STEP-BY-STEP PEANUT BUTTER CHIP COOKIES


Step 1: Cream together the butter, peanut butter and sugars in a large mixing bowl. This recipe uses both light brown soft sugar and caster sugar.

Step 2: Beat in the egg and vanilla extract until it is all combined.

Step 3: Mix in the dry ingredients (plain flour and bicarbonate of soda) with a wooden spoon and a soft dough will form.

Step 4: Mix in the peanut butter chips and white chocolate chips. Give it a really good stir.

Step 5: Spoon walnut size pieces onto lined baking trays.

Step 6: Bake in a preheated oven at 190°c (170°fan) for 10-12 minutes, until golden. The cookies will be slightly soft to touch but will firm up once cooled.

TOP TIPS FOR MAKING THESE PEANUT BUTTER COOKIES


  • I've used some white chocolate chips along with the peanut butter chips. If you prefer you can use all peanut butter chips. Or, use milk chocolate chips instead of white chocolate chips.
  • The cookies will keep in an airtight container for up to 3 days. I doubt they will last that long though.
  • They make a fantastic mid morning snack for kids, with a glass of milk.
  • The recipe can easily be doubled if you're feeding a crowd.

CAN YOU FREEZE THESE COOKIES?


Yes you can! The baked cookies freeze really well. Just make sure they are in a sealed container to prevent freezer burn.

BEST WAY TO FREEZE THE UNCOOKED COOKIE DOUGH


The uncooked cookie dough can also be frozen. The best way to do this, is to put walnut size balls of cookie dough onto lined trays, then open freeze. 

When completely frozen, pop the frozen dough balls into freezer bags, and stash in your deep freeze until needed.

When you are ready to bake, just put the dough balls, well spaced, onto lined baking trays, and pop straight into the preheated oven. You will need to extend the cooking time by 3 minutes.

An easy peanut butter chip cookie recipe.

Ingredients:

  • 100g Butter
  • 15g Peanut Butter
  • 100g Light Brown Sugar
  • 100g Caster Sugar
  • 1 Egg
  • 1 TSP Vanilla Extract
  • 200g Plain Flour
  • 1/2 TSP Bicarbonate of Soda
  • 100g Peanut Butter Chips
  • 50g White Chocolate Chips

Instructions:

  1. Preheat the oven to 190°c (170°fan). Line to two large baking trays with baking paper.
  2. In a large bowl, cream together the butter, peanut butter, light brown sugar and caster sugar.
  3. Add the egg and vanilla extract and beat well until everything is combined.
  4. Mix in the flour and bicarbonate of soda before folding through the peanut butter chips and white chocolate chips.
  5. Spoon walnut size pieces, well spaced, onto the baking trays.
  6. Bake for 10-12 minutes.
  7. Leave to cool for 5 minutes before transferring to a wire rack.
