Chocolate Cornflake Slices


Easy, make-ahead, chocolate cornflake slices. Dense and fudgy with an almost brownie like texture, they are perfect with a glass of cold milk or cup of tea. A great bake for children's parties.

These chocolate cornflake slices are a chocoholics dream and so easy to make.

The hardest thing about making them, is waiting long enough for the chocolate topping to set. In fact, I sometimes cheat and pop them in the freezer for 20 minutes, so they firm up faster.

These slices are a great make-ahead bake for children's birthday parties or family gatherings. They will happily sit in a sealed container for a couple of days before you need them.

They are also my go to recipe for charity bake sales, as they seem to be enjoyed by everyone who try's them.

TOP TIPS FOR MAKING THE CHOCOLATE CORNFLAKE SLICE


  1. Add a handful of raisins to the base mix to give it a fruity twist. Dried cranberries or chopped dried apricots would also work well.
  2. Make it nutty by adding a handful of chopped pecan nuts or hazelnuts.
  3. The recipe can easily be doubled to feed a crowd. Use two 20cm square cake tins or one large roasting tin if you want to double the recipe.
  4. For extra decadence, drizzle the top with melted white chocolate.
  5. You could try using other cereals like rice krispies, coco pops or crushed up weetabix, instead of cornflakes.
  6. The chocolate cornflake slices can be frozen for up to three months. Place the cut slices in freezer safe containers. Make sure you separate each layer of slices with baking parchment to prevent them from sticking together.

WHAT ARE CORNFLAKES ?


    Cornflakes are a breakfast cereal made by toasting flakes of corn. 

    First created by William Kellogg back in 1894, for his brother, a superintendent at Battle Creek Sanatorium. He wanted a healthy breakfast to give to his patients.

    William Kellogg wanted to add sugar to the corn flakes, which his brother disapproved of, so he set up his own company to produce corn flakes for the wider public.

    They are still one of the most popular breakfast cereals today, nearly 130 years later!

    CHOCOLATE CORNFLAKE SLICES STEP BY STEP INSTRUCTIONS


    Step 1: Weigh out the dry ingredients - self raising flour, cocoa powder, caster sugar, desiccated coconut and cornflakes.

    Step 2: In another bowl, melt together the dark chocolate and butter (in a microwave will be fine), then add the vanilla extract.

    Step 3: Mix the melted chocolate into the dry ingredients until they are all combined.

    Step 4: Press down firmly into a baking tin and bake for 20 minutes in a preheated oven.

    Step 5: Leave to cool then spread over more melted chocolate and sprinkle with cornflakes.

    Step 6: Leave the chocolate to set before cutting into slices. You can pop them in the fridge at this point to speed up setting!

    Chocolate Cornflake Slices

    Easy chocolate cornflake slices, perfect with a glass of milk or cup of tea.

    Ingredients:

    • 120g Self Raising Flour
    • 2 TBSP Cocoa Powder
    • 100g Caster Sugar
    • 50g Desiccated Coconut
    • 30g Cornflakes
    • 100g Dark Chocolate
    • 160g Butter
    • 1 TSP Vanilla Extract
    • For the topping:
    • 100g Dark
    • 100g Milk Chocolate
    • 1 TBSP Butter
    • 10g Cornflakes to decorate

    Instructions:

    1. Preheat the oven to 180°c (160°fan) and line a 20cm square baking tin with baking paper.
    2. In a large bowl mix the self raising flour, cocoa powder, caster sugar, desiccated coconut and cornflakes together.
    3. In another bowl, melt the dark chocolate and butter (a microwave is fine), then add in the vanilla extract.
    4. Mix the melted chocolate and butter mixture into the dry ingredients. Once combined press into the tin.
    5. Bake in the oven for 20 minutes. Leave to cool.
    6. Once completely cool, melt the topping ingredients together in a microwave and spread on top of the cornflake slice. Sprinkle over the cornflakes and leave to set before cutting into slices.
